Why are we called Laguna Brava?

Laguna Brava is a Natural Reserve of vicuñas and flamingos located at more than 4,200 meters above sea level, in the province of La Rioja, Argentina. It is an indescribable place where the aridity and splendor of the Andes Mountains combine with an ecosystem brimming with color and biodiversity. These conditions in which we find life in immense harmony reminds us of the essence of nature and the reflection of a product that manifests it, the EXTRA VIRGIN OLIVE OIL.

Care of the field and its trees

We have cultivated land with slopes that allow the dispersion of cold air masses, which reduces possible frost damage to the fruit.

We perform an annual selective pruning, which collaborates with the aeration and entrance of light into the tree canopy. Increasing production rates in the long term, and maintaining the health of the olive tree and its fruits.

Mechanical harvesting

Mechanical harvesting avoids picking fruit from the ground in poor condition and fruit contact with man. Two types of harvesting technologies are applied in a complementary manner, achieving the extraction of green fruit in optimal conditions. There are riding-type harvesters and side-by-side harvesters, which turn the fruit by vibrating.

Mechanization at this stage facilitates the continuity of the harvest and logistics of the fruit, minimizing the time in which it is processed, thus preserving the integrity of the oil content.

From the moment the fruit is harvested, aerobic and anaerobic degradation processes begin, which affect the acidity levels of the oil. Thanks to our harvesting technology and milling capacity, the fruits are processed within 7 hours from the moment of harvesting, thus guaranteeing oils with low acidity index (values below 0.4%).

Washing, milling and extraction

The company uses state-of-the-art German, Spanish and Italian technology for the washing, milling and oil extraction stages by centrifuges that work in two phases.

The milling capacity exceeds the annual production, which allows the company to run an intensive campaign to guarantee the optimum ripeness of the fruit at the time of oil extraction.

The fruit is crushed into a paste that passes through a drum that rotates at high revolutions, thus producing the separation of phases of different densities. Centrifugal separation minimizes the phase separation time, preventing the water inside the fruit from carrying away the antioxidant compounds that are beneficial to health.

Storage

Once the oil is obtained, it is stored under a modified atmosphere with nitrogen in stainless steel tanks located in a refrigerated chamber until bottling, in order to maintain the oil’s integrity.

Packaging

We carry out a type of mechanical packaging with controlled atmosphere to preserve the organoleptic and qualitative properties of the extra virgin olive oil.

HACCP

Hazard Analysis and Critical Control Point (HACCP) is a science-based system that identifies specific hazards and measures for their control to ensure food safety.

KOSHER

Kosher foods are foods that are prepared according to Jewish dietary standards, which are permissible for consumption, as they meet the dietary requirements of the Hebrew Bible.

NO T.A.C.C.

T.A.C.C.C.-free foods are gluten-free, suitable for coeliacs. The acronym stands for wheat, oats, barley and rye free.
