210g of bitter or semi-bitter chocolate (10g is to grat)
4 eggs
60g of sugar
40 ml of Laguna Brava Everyday extra virgin olive oil
75 ml of milk
Limes
For the cream:
200ml of milk cream
50g of sugar
½ teaspoon of vanilla essence
Instructions

Separate the egg yolks and beat the egg whites until it is stiff.

Beat the egg yolks with the sugar until they are white.

Melt the chocolate, the olive oil and the milk over low heat.

Gradually add the melted chocolate -at room temperature- to the egg yolks.

Fold in the egg whites in the same preparation a little bit at a time so that the preparation does not droop.

Place in glasses and put them in the refrigerator for 1 hour.

For the cream: whip the milk cream incorporating the sugar and the vanilla essence a little bit at a time. Refrigerate until use.

Once refrigerated, decorate the mousse with whipped cream, grated chocolate and drizzle of extra virgin olive oil and lime zesters.
