250g of elavening flour
1/2 cup of extra virgin olive oil
200g of natural yogurt
3 eggs
Zest of 2 lemons
Juice of 1 lemon
1 cup of powdered sugar
1 pinch of vanilla essence
Milk
2 tablespoons of poppy seeds
Glaze:
100g of powdered sugar

Instructions

Sift the flour into a bowl, add the sugar and the lemon zest. Make a hole in the center and add yogurt, oil, vanilla essence, lemon juice and eggs one by one mixing and alternating with a splash of milk. Finally, add the poppy seeds.

Butter and flour a pudding pan and place the mixture.

Bake in a preheated oven at 180ºC (350ºF). Bake for approximately 40 minutes.

Glaze: mix the powdered sugar with drops of lemon juice until the desired consistency is reached so that it can be poured over the pudding.

Decorate with lemon slices.
