Chicken Rotti

Ingredients

1 chicken
2 onions
300g of potatoes
2 red onion
1 bundle of asparagus
1 leek
2 or 3 lemons
100g of butter
Aromatic herbs
1 teaspoon of paprika
2 garlic cloves
Salt and pepper to taste
Extra virgin olive oil

Instructions

1 Preheat the oven to 180ºC. Meanwhile clean the chicken. Paint the inside with butter and aromatic herbs to taste, place a whole peeled onion and bridle.
2 Put the chopped onions and leeks in a baking dish. Then place the chicken on top and cook for one hour and a half, depending on the size.
3 Prepare an emulsion of olive oil, paprika, salt, pepper and lemon juice. Brush the chicken with the mixture every 10 minutes.
4 In the meantime, cut in a half the potatoes. Cook them in a pot with cold water until they boil, drain and let them cool.
5 Cut the red onions cut in to quarters. Sauté them and the potatoes with olive oil and set aside.
6 On the other hand, boil water with coarse salt in a pot and place the clean asparagus. Cook them for 3 minutes. Then drain and put them in cold water to cut the cooking time. Sauté them with olive oil and garlic and set aside.
7 Once the chicken is ready, place the vegetables in a serving dish and serve.
