Neapolitan style pizza margherita

Ingredients

For the dough:
1 kg of flour “000”
2 cups of warm water
20g  of fresh yeast
Salt
4 tablespoons of extra virgin olive oil 

For the sauce:
10 leaves of fresh basil
5 tomatoes
2 garlic cloves
Extra virgin olive oil
150g of mozzarella cheese
Salt and pepper to taste

Instructions

1 Dough: put the yeast in a little warm water, once leavened add flour, olive oil, salt and the rest of the water. Knead until it is smooth and let it rise till its double its volume.
2 Sauce: peel the tomatoes and remove the seeds. Then process with the garlic, a little bit of salt and olive oil.
3 Once the dough is risen, divide it into 4 parts and make rolls. Let them rise again.
4 Stretch a bun on a pizza plate. Start from the center towards the sides, try to leave the center thinner and the edge thicker. Cover the dough with the crushed tomato sauce and the sliced mozzarella cheese, season with salt and pepper and drizzle with a little olive oil.
5 Bake in a high oven for about 20 minutes and serve.
6 Garnish with fresh basil leaves.
